Moose Tracks and Cheese Sauce

Life gets complicated sometimes. Last Sunday, we celebrated my grandson’s birthday. He and his wife invited me for dinner. I asked what I could bring. My designated contributions: cauliflower with cheese sauce and Moose Tracks Ice Cream. I found the recipe for the cheese sauce online and planned to purchase the ice cream. 


I thought I knew about Moose Tracks ice cream and looked for it at all my usual grocery shops. But no Moose Tracks.  What to do? Ask Siri. Turns out that Moose Tracks is now produced as an Albertsons/Safeway brand. No problem. When I got to Safeway, I was confronted by 4 variations of Moose Tracks: Brownie Moose Tracks, Mint Moose Tracks, Chocolate Moose Tracks, and Extreme Moose Tracks. Later, I found it was at Fred Meyer's too. 


And we used to have such simple lives. So, speaking of simple, here is the recipe I found. 

 

Simple Cheese Sauce Recipe: 

  2 Tbsp butter

2 Tbsp flour 

1 C whole milk

1 ½ C freshly shredded cheddar cheese  


Pinch of pepper and a sprinkle of sweet paprika


Melt butter in a saucepan. Whisk in flour, stirring as you add. Cook for 1 minute (important to remove the raw flour taste from the sauce). Slowly whisk in the milk. Stir continuously for 3=5 minutes or until thickened. Lower the heat. Add the grated cheddar a little at a time until the cheese is melted. Add seasoning. If too thick, add more milk. Not sure what to do if it is too thin. ChatGPT (Where I got this recipe) didn’t say.
